Costillas de cerdo criollo

Twenty four bone-like arches, twelve on either side, that they range from a vertebra and are present to constitute the thorax walls. They are very tasty cartilaginous bones. They get cooked entire (to the live coal), baked, and cuts (stews and in sauce)
